Stewed Okra And Tomatoes
A delicious southern classic, stewed okra and tomatoes is oh sooo good.
Whether you serve this great side dish poured over some white rice or you just
eat it as a side dish...you're gonna love it!
Here's what you are going to need:
4 slices of bacon, cut into small pieces
1/2 cup onion
1/2 cup green bell pepper
2 cloves of garlic
1 stalk of celery, sliced fairly thin
1 (29 ounce) can of whole tomatoes
1 tablespoon of chicken base
1 tablespoon sugar
2 cups of fresh okra (if you don't have fresh, frozen will work just fine)
pepper to taste
Here's what you need to do:
In a large pan, cook bacon pieces until crisp. Add the onion, green bell pepper,
celery and garlic. Saute until onions become translucent (about 5 minutes). Add
tomatoes, chicken base, sugar and okra. Bring to a boil, reduce heat, cover and
simmer for 20 to 30 minutes until okra is tender. Add pepper to taste.
You'll find that this okra with tomatoes recipe is great poured over some white
rice.

SOUTHERN STEWED OKRA

1 c. sliced fresh okra
1 med. onion, chopped
1 green pepper, chopped
1/4 c. vegetable oil
3 tomatoes, peeled and quartered
1 tsp. sugar
1 tsp. all purpose flour
1/2 tsp. salt
1/2 tsp. pepper
Cook okra in boiling salted water 10 minutes; drain well and set aside.
Saute onion and green pepper in oil. Add tomatoes; cook over medium
heat 5 minutes. Stir in okra, sugar, flour, salt and pepper. Cook
over low heat 5 to 8 minutes or until vegetables are tender. Makes 4
servings.

Ingredients
- 3 slices of bacon
- 1 pound of okra, fresh or frozen, sliced
- 1-1/2 cups of chopped Vidalia or other
sweet onion
- 2 large tomatoes,
chopped
- 1 can of mild Rotel diced tomatoes, drained,optional
- 1 large clove of garlic,
minced
- 1/2 teaspoon of granulated sugar
- Kosher salt and freshly cracked black pepper,to
taste
- Cajun seasoning,
like (Slap Ya
Mama), to taste
Instructions
Heat a cast iron skillet over medium high heat and cut the bacon into
the skillet. Cook until crisp, remove the bacon and set aside. Reduce
heat to medium and add the sliced okra (if frozen you do not need to
thaw) to the bacon drippings and stir fry, turning occasionally, for
about 5 minutes. Add the onion and cook another 5 minutes, stirring
occasionally. Add in the tomatoes, Rotel, garlic, sugar, salt, pepper,
Cajun seasoning and reserved bacon. Give it a stir, cover and let cook
for about 15 to 20 minutes, or until veggies are tender. Taste and
adjust seasonings as needed.
Serve immediately. Very good as a side dish, or as a main course served
over rice.
